I usually use a flat baking pan, cover it with foil paper.
After cutting the ends of the asparagus 3-5 cm, place the asparagus on the pan.
Pour olive oil, and sprinkle a teaspoon of salt and pepper mix over the asparagus.
Put in oven at 350 degrees for 20-30 minutes or until tender enough for your liking.
** Another option is to sautee your asparagus in olive oil on the stove in a nonstick pan.
Sweet Chili Salmon
1 tbs olive oil 1 lb salmon 1/4 tsp sea salt
1/4 tsp black pepper 2 tbs honey 1 1/2 tbs lime juice 1 tbs oregano 2 tbs scallions, chopped
Heat a nonstick pan with the olive oil. Rub the salmon with salt and pepper mix. Place the salmon into the hot skillet. Cover. Cook until the top begins to become opaque(white). Flip, and finish cooking until salmon is cooked through.
Mix the remaining ingredients in a small bowl. Whisk together. I turned the oven on to cook my asparagus so I placed the salmon in a pain, poured the sauce and let it stay in the oven for 10 minutes to soak in.
1 cup swanson chicken broth
1 head cauliflower, cut into flowerets
1 tbs minced garlic
Place pot with broth and cauliflower on stove. Cover and bring to boil over high heat.
Reduce heat and simmer until cauliflower is very soft or most of the broth has evaporated.
Drain. Using a blender or food processor, blend cauliflower to form a thick puree. Add garlic and blend again.
This recipe took me no more than 30 minutes to prepare and finish. Really easy and definitely healthy. For chicken broth, use the organic brand with the less sodium.
